  • 1 loaf bread, crumbled
  • 1 stick oleo, divided
  • 1/4 c. cooked, diced carrots
  • 1/2 c. celery, finely cut
  • 3 eggs, beaten
  • 1 c. cooked, diced potatoes, salted
  • 1 chicken, finely cut
  • 3 Tbsp. parsley
  • 2 c. milk

Directions

    Brown bread in 1/2 stick oleo, turn often.

    Remove from heat. Beat eggs, add milk, salt and pepper to taste and mix together. Melt other 1/2 stick in 13 x 9-inch baking dish.

    Meanwhile, mix egg mixture with carrots, celery, potatoes, chicken, parsley and milk.

    Stir in bread crumbs and pour over oleo in baking dish. Bake at 350° until browned all around.
