- 1 egg, beaten
- 1 tsp. butter
- 1/3 c. chopped onion
- 1 1/4 c. cooked rice
- 1 c. sliced carrots
- 1 c. broccoli tops
- 1 c. diced cooked chicken
- 1/4 c. water
- 2 to 3 Tbsp. soy sauce
Directions

1Cook beaten egg in the butter in a 10-inch skillet until set. Add onion and rice.

2Cook over medium heat, stirring occasionally, for 4 to 5 minutes.

3Add carrots, broccoli and chicken.

4Stir until combined.

5Add water and soy sauce.

6Stir until rice is browned.
