- 13 ounces sea salt
- 24 ounces water
- 3 1/2 ounces anchovies
- 1 tablespoon reduced wine
- 1 pinch oregano
Directions

1dissolve the salt in the water over a lowq heat.

2add the anchovies to the salted water with the oregano and wine.

3simmer gently for 20 minutes and the leave to cool.

4strain the garum through a fine sieve or muslin cloth and store in a jar ready for use.
