Ingredients
- 1 pkg. (1.25-oz.) active dry yeast (or 2 1/4 Tbsp.)
- 2 Tbsp. warm water (105~ to 115~)
- 2 c. buttermilk
- 5 c. plain flour
- 1 tsp. soda
- 1 Tbsp. baking powder
- 2 tsp. salt
- 1/4 c. sugar
- 1 c. vegetable shortening
Directions

1Dissolve yeast in warm water; let stand for 5 minutes.

2Stir in buttermilk and set aside.

3In a large bowl, combine flour, baking powder, salt, baking soda and sugar; cut in shortening with a pastry blender until mixture is crumbly.

4Make a swell in center of mixture; add reserved yeast mixture; stir just until dry ingredients are moistened.

5Turn dough out onto a lightly floured work surface, and knead lightly 3 or 4 times.

6Roll dough to 1/2-inch thickness; cut with a 2-inch biscuit cutter.

7Place on lightly greased baking sheets.

8Cover and let rise in a warm place, free of drafts, for 30 minutes.

9Bake at 400° for 10 to 12 minutes or until biscuits are lightly browned.

10Makes 3 1/2 dozen.
