Angel Walnut Cake

Ingredients
- 1 1/4 c. egg whites (about 8 to 10 eggs)
- 1/4 tsp. salt
- 1 1/3 tsp. cream of tartar
- 1 1/2 c. sugar
- 1 Tbsp. black walnut flavoring
- 1 c. cake flour
- 1 c. chopped walnuts
Directions

1Whip egg whites until foamy.

2Add salt and cream of tartar and continue to whip until they hold a point but are not dry.

3Add 1/2 cup of sugar slowly, then the extract.

4Sift rest of sugar and flour together.

5Fold in small amount at a time, mixing as little as possible.

6Add walnuts.

7Bake in ungreased tube pan for 1/2 hour at 275°, then 1/2 hour at 325°.

8Invert pan and let hang until cold.

9This is good without frosting.

10I do sometimes use a caramel frosting.
