- 2 lb. crab meat*
- 2 slices bread, crust removed
- milk (enough to cover bread)
- 2 eggs, slightly beaten
- salt to taste
- pepper to taste
- dry mustard to taste
Directions

1Pick over crab meat but leave as large as possible.

2Meanwhile have bread soaking in milk.

3Squeeze milk from bread, breaking in pieces.

4Add to crab meat with eggs, salt, pepper and dry mustard. Mix lightly.

5Press into cakes.

6Place on lightly floured paper or plate.

7Sprinkle with enough flour, for easy handling.

8Fry in fat (butter) until deep brown on both sides.
