Ingredients

  • 1 tbsp olive oil, extra virgin
  • 2 medium white onions (diced)
  • 2 large sweet potatoes
  • 45 oz kidney beans (drained)
  • 1/3 tsp oregano
  • 76 oz carton low sodium chicken broth
  • 2 1/2 tsp sea salt
  • 2 tsp ground cumin
  • 1 tsp ground black pepper
  • 1 lb fresh baby spinach
  • 1/2 lb fresh kale (chopped)
  • 4 large chicken breasts (cooked and chopped)
  • 1 large red bell pepper (diced)
  • 1 tsp grated parmesan cheese

Directions

    Heat oil in large pot over medium-high heat.

    Saute onions for 5 minutes.

    Stir in remaining ingredients except parmesan cheese, and bring to boil

    Reduce heat, cover and lightly boil until sweet potatoes are soft.

    Approximately 12 to 15 minutes

    Sprinkle bowl of soup with parmesan cheese and serve.
