- 10 ounces all-purpose flour
- 3 teaspoons baking powder
- 12 teaspoon salt
- 1 34 ounces light brown sugar
- 3 12 ounces white sugar
- 1 cup buttermilk
- 14 cup unsalted butter (melted)
- 14 cup apricot preserves
Directions

1Preheat oven to 400 degrees F (205 degrees C).

2Stir together the flour, baking powder, salt and sugars in a large bowl.

3Make a well in the center.

4In a small bowl beat egg.

5Stir in buttermilk and melted butter.

6Add milk mixture to flour mixture.

7Mix gently with a rubber spatula until moistened, but do not beat.

8The batter will be lumpy.

9Spoon one tablespoon of batter into paper lined muffin pan cups.

10Add one teaspoon of jam to each cup.

11Fill cups with remaining batter.

12Bake for 20 minutes, or until golden.
