- 1 lb grnd beef
- 1 sm diced onion
- 28 ounce diced tomatoes -- canned, undrained
- 1 c. diced carrots
- 1 c. diced celery
- 1 c. potatoes -- peeled and cubed Salt and Pepper to taste
Directions

1In a skillet, cook beef and onion over medium heat till meat is no longer pink; drain.

2Add in tomatoes, carrots, celery, and potatoes.

3Bring to a boil.

4Reduce heat; cover, and simmer for 30 min or possibly till vegetables are tender.

5Sprinkle with salt and pepper.

6Yield: 6 servings.
