  • 1 lb grnd beef
  • 1 sm diced onion
  • 28 ounce diced tomatoes -- canned, undrained
  • 1 c. diced carrots
  • 1 c. diced celery
  • 1 c. potatoes -- peeled and cubed Salt and Pepper to taste

Directions

    In a skillet, cook beef and onion over medium heat till meat is no longer pink; drain.

    Add in tomatoes, carrots, celery, and potatoes.

    Bring to a boil.

    Reduce heat; cover, and simmer for 30 min or possibly till vegetables are tender.

    Sprinkle with salt and pepper.

    Yield: 6 servings.
