"Any Night" Casserole

Ingredients

  • 1 lb. boneless stew meat, cut in 1-inch cubes
  • 2 Tbsp. butter
  • 1/2 c. carrots, chopped fine
  • 1/2 c. celery, chopped fine
  • chopped parsley
  • 1 pkg. dry onion soup mix
  • 2 1/2 c. water
  • 1 small box Minute rice
  • Parmesan cheese

Directions

    In skillet, brown beef in butter.

    Add carrots and celery; cook slowly until nearly tender.

    Stir in soup mix and water.

    Transfer to 2-quart casserole.

    Bake at 350° for 1 1/4 hours or until meat is tender.

    Stir in rice.

    Cover and bake an additional 15 minutes. Serve with Parmesan cheese and parsley.
