Ingredients

  • 7 x Granny Smith apples
  • 1 c. Sugar
  • 2 c. Water
  • 1 Tbsp. Lemon juice
  • 1/4 tsp Vanilla extract
  • 1/4 c. Apple juice
  • 2 Tbsp. Sugar
  • 2 tsp Applejack brandy
  • 1 1/2 tsp Apricot brandy
  • 1 1/2 tsp Dark rum
  • 1/4 c. Heavy cream, whipped
  • 1/8 tsp Green food coloring

    Peel and core 6 of the apples.

    Combine 1 c. sugar with water and lemon juice and bring to a boil.

    Add in apples, simmer and baste 8 to 10 min till apples are tender.

    Remove apples from syrup.

    Cold and then chill.

    Peel and core remaining apple.

    Cut into cubes and put in small saucepan with vanilla, apple juice and 2 Tbsp.

    sugar.

    Simmer 15 to 20 min till apple is soft and any liquid is evaporated.

    Puree apple in blender.

    Cold.

    Add in applejack brandy, apricot brandy and rum.

    Mix in whipped cream and food coloring.

    Fill into center of poached apples.
