- 1 (10 ounce) package frozen chopped spinach, thawed and well-drained
- 2 cups shredded provolone cheese
- 3 tablespoons flour
- 14 cup chopped green onion
- 1 14 cups half-and-half
- 3 eggs, beaten
- 18 teaspoon salt
- 18 teaspoon black pepper
Directions

1Preheat ove to 375.

2Squeeze handfuls of spinach to remove excess water.

3Separate clumps and place between layers of paper towels; pat dry.

4Combine cheese, spinach and flour; mix well.

5Place cheese mixture in bottom of pie shell.

6Sprinkle green onions over cheese mixture.

7Lightly whisk together cream and eggs; pour over cheese.

8Sprinkle with salt and pepper.

9Bake 40 to 50 minutes, or until a knife inserted near the center comes out clean.

10Let stand 10 minutes before serving warm as an appetizer.

11Cut into 16 pieces or thin wedges.
