- 1 tablespoon olive oil, divided
- 1 cup chopped onion
- 2 tart cooking apples, peeled, cored, and finely chopped
- 2 cups cubed peeled baked potatoes
- 1 1/2 cups chopped skinless boneless rotisserie cooked chicken
- 1 teaspoon chopped fresh sage
- 3/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon paprika
Directions

1Heat 1 1/2 teaspoon oil in a large nonstick skillet over medium-high heat.

2Add in onion and apple; stir/saute 7 minutes or until mixture begins to brown.

3Spoon mixture into a large bowl.

4Add potato and remaining 5 ingredients to the bowl; toss well to mix.

5Heat 1 1/2 teaspoons oil in skillet over medium heat.

6Add apple mixture and pat into an even layer in skillet.

7Cook, without stirring, 2 minutes.

8Stir gently, cook 2 minutes or until potatoes begin to brown.
