- 1 cup granulated sugar
- 1 cup heavy cream or milk
- 1/4 cup vegetable oil
- 3 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour sifted
- 2 teaspoons baking soda sifted
- 1 apple cored, peeled, thinly sliced
- 3 1/2 ounces raspberries
- 1 tablespoon sliced almonds
- powdered sugar for dusting
Directions

1Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners.

2Combine sugar, cream, oil and vanilla. Fold in sifted flour and baking soda. Distribute between paper liners. Top with sliced apple, raspberries and almonds. Bake for 25-30 mins, until a skewer inserted in the center comes out clean.

3Serve cupcakes dusted with powdered sugar.
