Apple-Blueberry Bread

Ingredients

  • 1/2 c. butter or margarine, softened
  • 1 c. sugar
  • 2 eggs
  • 1 c. applesauce
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 to 1 c. fresh blueberries or dry pack frozen

Directions

    Grease and flour 9 x 5-inch loaf pan.

    Beat together butter, sugar and eggs.

    Stir in applesauce, then dry ingredients only until blended.

    Fold in blueberries.

    Spread into pan.

    Bake 55 to 60 minutes at 350°.

    Remove to wire rack to cool 10 minutes. Remove from pan and cool completely.

    (Any fruit may be used instead of blueberries.)
