Ingredients

  • 2 1/2 c. sifted all-purpose flour
  • 2 tsp. each baking soda and baking powder
  • 1 tsp. pumpkin pie spice
  • 2/3 c. sugar
  • 1 c. each currants and chopped pecans
  • 1/2 c. oil
  • 2 eggs, slightly beaten
  • 1 1/2 Tbsp. vanilla
  • 2 tsp. rum extract
  • 2 medium apples, grated
  • 1 Tbsp. grated orange peel
  • pecan halves and orange peel

    In a bowl, combine dry ingredients, pecans and currants.

    Add oil, eggs, vanilla and rum extract.

    Stir just to blend.

    Fold in apples and orange peel.

    Spoon into greased and floured 9 x 5 x 3-inch loaf pan.

    Decorate top with pecans and orange peel.

    Bake at 350° for 55 to 65 minutes until toothpick comes out clean. Cool; refrigerate.
