Apple Bread Pudding

  • 2 tbsp brown sugar
  • 2 medium apples, peeled, cored and thinly sliced
  • 21/2 cups milk
  • 1 None vanilla bean, halved lengthwise
  • 4 slices cinnamon raisin bread, cut into quarters
  • 3 None eggs
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

    Preheat the oven to 325°F. Grease a deep 1 1/2-quart baking dish.

    Dissolve the brown sugar in 1 tbsp water in a medium skillet on low heat. Add the apples. Simmer, uncovered, for about 5 mins or until tender, stirring occasionally.

    Place the milk and vanilla bean in a medium saucepan; bring to a boil. Remove from the heat. Let stand, covered, for 5 mins. Discard the vanilla bean.

    Arrange the bread and apple in alternate layers in the prepared dish.

    Whisk the eggs, cinnamon and nutmeg in a large bowl. Gradually whisk the hot milk mixture into the egg mixture. Pour the mixture carefully over the bread and apple. Place the dish in large roasting pan; add enough boiling water to the roasting pan to come halfway up the side of the baking dish.

    Bake, uncovered, for about 1 hour or until set. Serve with ice cream or whipped cream, if desired.
