Apple-Bread Pudding

Ingredients
- 4 slices bread
- 1/4 c. tub margarine
- 2 apples, peeled, cored and chopped
- egg substitute equivalent to 2 eggs
- 1/2 c. sugar
- 1/8 tsp. salt
- 1 c. evaporated skim milk (undiluted)
- 1 c. boiling water
- 1 tsp. vanilla extract
- 1 tsp. ground cinnamon
Directions

1Spread bread with margarine and toast in oven.

2Cut toasted bread into cubes and place in an 8 x 8-inch baking pan greased with margarine.

3Add apples.

4Mix egg substitute, 1/4 cup sugar, salt, milk and water together in a separate bowl.

5Pour mixture over apples and let set 10 minutes.

6Stir in vanilla.

7Combine remaining sugar and cinnamon and sprinkle over top.
