- 2 1/2 cups flour, all-purpose
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 cup butter or margarine
- 1/2 cup raisins, seedless optional
- 1 cup apple butter
- 1 large eggs slightly beaten
- 1 x nonstick cooking spray
- 1 x apple butter for accompaniment
Directions

1Preheat oven to 425 degrees F.

2In a large bowl combine flour, sugar, baking powder and baking soda.

3Cut in butter or margarine with pastry cutter or fork until mixture resembles coarse crumbs.

4Add raisins.

5In a separate bowl combine apple butter and egg.

6Add flour mixture, stirring j ust until dry ingredients are moistened.

7Spray 2 1/2 inch muffin tins with vegetable cooking spray.

8Fill almost full wi th batter.

9Bake at 425 degrees F for 14 to 16 minutes or until lightly browned.

10Cool slightly.

11Serve warm with additional apple butter.
