  • 3 Granny Smith apples or Honey Crisp, peeled and cored
  • 5 tablespoons granulated sugar
  • 5 teaspoons ground cinnamon
  • 1 cup vegetable oil or coconut oil (not virgin)
  • 4 eggs
  • 1 teaspoon orange zest
  • 1/4 cup orange juice
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 cups sugar
  • For caramel glaze:
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup whipping cream
