  • 2 c. sugar
  • 1 1/2 c. corn oil
  • 3 eggs
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 5 c. diced apples (6 large apples)
  • 1 c. pecans, chopped

Directions

  1. 1
    Combine sugar, oil, eggs, flour, vanilla, baking soda, salt and cinnamon; stir until well blended.

    Add apples; stir well. Add pecans; stir well.

    Bake in preheated 325° oven for 1 hour. Remove cake and sprinkle top with powdered sugar.

    Serve with whipped cream.
