  • 4 1/2 c. apples, peeled, cored and diced very small
  • 2 c. sugar
  • 1/2 c. Crisco oil
  • 1 c. pecans, chopped
  • 2 eggs, well beaten
  • 2 tsp. vanilla
  • 2 c. cake flour, sifted
  • 1 tsp. baking soda
  • 1 tsp. cinnamon

    In a large bowl, mix apples and sugar.

    Add oil, nuts, eggs and vanilla.

    Mix until well blended.

    Add dry ingredients and mix well.

    Pour into greased and floured 9 x 13-inch pan and bake at 350° for 1 hour or until cake tester comes out clean.
