- 1/2 lb. boned chicken
- 2 to 3 Tbsp. oil
- 1 golden Delicious apple, sliced
- 1 medium green pepper, sliced
- 1 medium onion, sliced
- 1 Tbsp. cornstarch
- 2 Tbsp. sugar
- 1/2 tsp. salt
- dash of pepper
- 2 tsp. soy sauce
- 3 Tbsp. vinegar
Directions

1Remove skin from chicken; cut into 1/2 x 2 1/2-inch strips. Heat 2 tablespoons oil in skillet.

2Saute chicken until cooked; remove from pan.

3Add oil to skillet, if necessary.

4Saute green pepper and onion until crisp-tender.

5Return chicken to vegetables.

6Add apple and heat thoroughly.

7Combine remaining ingredients; add to apple mixture and cook until sauce thickens. Makes 2 to 3 servings.
