  • 6 c. apples (6 to 8 apples)
  • 1 c. apple juice or apple cider
  • 2/3 c. sugar
  • apple juice or apple cider
  • 2 Tbsp. cornstarch
  • 1 tsp. lemon juice
  • 1 tsp. vanilla
  • 1 Tbsp. butter
  • pastry for 9-inch lattice top pie

Directions

    Peel, core and slice apples.

    Bring 1 cup cider (or juice) and sugar to boiling; add apples.

    Cook, uncovered, until tender, about 8 minutes.

    Drain; reserve syrup.

    If needed, add cider to syrup to equal 1 1/3 cups.

    Mix cornstarch, lemon juice, vanilla and 2 tablespoons cold water; stir with butter into syrup.

    Cook and stir until thickened and bubbly.

    Remove from heat; stir in apples.

    Line a 9-inch pie plate with pastry; add apple mixture. Adjust lattice top; seal.

    Sprinkle with sugar.
