Apple cinnamon muffins

  • 2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 3 tsp baking powder
  • 1 egg
  • 1 cup evaporated milk
  • 1/4 cup vegetable oil
  • 1 apple
  • 1 packages thick cream
  • 1/3 cup sugar water or (brown sugar melted in water)
  • 1 tbsp cornstarch

    Preheat oven to 180 c degrees .

    Butter muffin pan.

    Whisk flour, sugar, baking powder, and cinnamon in a bowl.

    Peel and chop your apples in the way you'd like

    In another bowl whisk egg, milk, and oil.

    Mix in egg mixture into flour mixture with a spoon but not fully mixed (because you don't want to over mix your batter so you slightly mix them together).

    Add in apples and crushed almonds into the slightly mixed egg and flour mixture and fold until flour is moistened.

    Fill the muffin tins 3/4 full of the muffin batter.

    Bake for 15-20 min.

    For the finishing touches whisk thick cream, sugar water and cornstarch without stopping until mixture becomes thick.
