Apple Compote With Cinnamon

  • 2 1/4 pounds Bravo de Esmolfe apples alternatively, granny apples
  • sugar half the weight of apples after they have been peeled
  • 1 cinnamon stick
  • 2 tablespoons water

Directions

    Clean the apples, remove the pips and the shell and cut into quarters.

    Weigh and place in a pan adding sugar corresponding to half the weight of the apples.

    Add the cinnamon stick and two tablespoons of water.

    When the apples are well cooked, remove the cinnamon stick, grind, and cook further.

    Pour into sterilized jars and turn them upside down to create a vacuum.
