- 2 cup jasmine rice
- 1 zest from 1 lime
- 1 1/2 cup water
- 1 1/2 cup coconut milk
- 1 pinch salt
Directions

1Put the rice, coconut milk, water, and salt in a saucepan and bring to a simmer.

2Cover and gently simmer until liquid is absorbed, about 12 to 15 minutes.

3Fluff with a fork and stir in the lime zest.

4Serve immediately.

5*The zest is the brightly colored outside of the peel.

6Use a small grater to remove the zest, but leave the white part (pith) behind.
