Ingredients
- 1 c. all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/3 c. butter (room temperature)
- 1/2 tsp. vanilla extract
- 1/2 tsp. grated lemon rind
- 1/3 c. sugar
- 1/2 c. milk
- 3 green cooking apples
- 1/4 c. sugar
- 1/4 tsp. each: cloves, nutmeg and allspice
- sweetened lightly whipped cream
- cinnamon
- sifted powdered sugar (optional)
Directions

1Mix together flour, baking powder and salt.

2Set aside.

3Cream butter, vanilla, lemon rind and 1/2 cup sugar until well blended. Add egg and beat until fluffy.

4Add flour mixture to the creamed mixture and mix until a smooth batter forms.

5Pare, core and quarter the apples.

6Arrange in the bottom of an 8-inch quiche pan, shallow casserole or pie pan.

7Mix the 1/4 cup sugar with the cloves, nutmeg and allspice.

8Sprinkle half the mixture over apples in the pan.

9Pour batter over apples.
-
10Sprinkle with remaining spiced sugar.
-
11Bake at 375° for 40 to 45 minutes or until cake tester comes out clean.

12Serve hot with whipped cream and a sprinkling of cinnamon.

13Also can sprinkle with sifted confectioners sugar.

14Good as coffee cake the next day.
