  • 3/4 cup self-rising flour
  • 1 tsp ground cinnamon
  • 1/3 cup granulated sugar
  • 5 tbsp cold butter, chopped

  • 1 cup (2 sticks) butter, melted
  • 4 None eggs
  • 2 3/4 cups self-rising flour
  • 1 1/2 cups granulated sugar
  • 1 cup light sour cream
  • 1/3 cup custard powder
  • 1 tsp vanilla extract
  • 2-3 None apples, peeled, cored and cooked with sugar to taste
  • None None Whipped cream, to serve

Directions

    Preheat the oven to 350°F. Lightly grease a 13 x 9-inch baking pan. Line bottom and sides with parchment paper, extending paper 1-inch over long sides.

    For the crumble, sift flour and cinnamon into a medium bowl. Stir in sugar. Rub in butter, using fingertips, until mixture resembles coarse breadcrumbs. Refrigerate until needed.

    For the cake, beat butter and eggs in a large bowl with an electric mixer until combined. Add flour, sugar, sour cream, custard powder and vanilla; beat on low speed until pale and creamy.

    Pour half the batter into prepared pan. Spread cooked apple over the top. Top with remaining batter. Sprinkle with crumble.

    Bake 50-55 mins, until toothpick inserted into center comes out clean. Cover with foil if browning too quickly. Serve warm with whipped cream.
