- 6 tbsp reduced-fat margarine
- 1/3 cup brown sugar + 1 tbsp
- 1 None egg
- 1 cup self-rising flour, sifted + 2 tbsp
- 1 None large Granny Smith apple, peeled, cored, chopped into small chunks
- 1/4 cup skim milk
- 2/3 cup rolled oats
- 1 tbsp desiccated coconut
- 1/2 tsp pumpkin pie spice
- None None heavy cream, to serve
Directions

1Preheat oven to 350°F. Lightly grease a 6-cup muffin pan with oil.

2Cream margarine and 1/3 cup sugar until light and fluffy. Add egg, beating well. Fold in flour, apple and milk until just combined. Transfer to prepared pan.

3Combine oats, coconut, 1 tbsp sugar and pumpkin pie spice. Sprinkle evenly over muffin batter and bake for 15-20 mins, or until a skewer inserted in the center comes out clean. Let cool for 5 mins in pan. Serve warm, drizzled with heavy cream.
