- 1 1/2 cups unbleached flour, sifted
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 egg substitute
- 1 cup shredded apple
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/4 cup shortening
- 1/2 cup soymilk
- 1/4 cup brown sugar
- 1/4 cup pecans, chopped
Directions

1Sift together flour, sugar, baking powder, salt and 1/2 tsp.

2cinnamon into mixing bowl.

3Cut in shortening with pastry blender until fine crumbs form.

4Combine egg replacer and soymilk.

5Add to dry ingredients all at once, stirring just enough to moisten.

6Stir in apples.

7Spoon batter into paper-lined 2 1/2-inch muffin-pan cups, filling 2/3rds full.

8Mix brown sugar, pecans, and 1/2 tsp cinnamon in a bowl.

9Sprinkle over muffins.

10Bake in 375 degree oven 25 minutes or until golden brown.
