  • 3 eggs
  • 1 c. sugar
  • 2 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 2 c. grated apples
  • 8-inch unbaked pie shell
  • 1 Tbsp. melted butter
  • 3 tsp. sugar
  • 1/2 tsp. cinnamon

    Beat eggs well.

    Add 1 cup sugar, lemon juice and vanilla. Add apples, mixing well.

    Pour into pie shell.

    Pour melted butter over top.

    Mix cinnamon and 3 teaspoons sugar together, then sprinkle over top of pie.

    Bake at 375° for 45 minutes or until custard sets.
