Apple Dessert Pancakes

- 4 c. pared, thinly sliced apples (4 medium)
- 1/4 c. sugar
- 1 tsp. cinnamon
- 2 beaten eggs
- 1 c. milk
- 1/2 tsp. Burnett's pure vanilla
- 3 Tbsp. Land O Lakes butter, melted
- 1/2 c. Pillsbury's Best all-purpose flour *
- 1/2 tsp. salt
- 1/2 c. firmly packed brown sugar
- 1 tsp. grated orange rind
- 1/3 c. orange juice
Directions

1Combine apples with sugar and cinnamon in saucepan.

2Cover; cook until apples are tender.

3Combine in small mixing bowl, eggs, milk, vanilla and butter.

4Stir in flour and salt.

5Heat lightly greased skillet over medium-high heat.

6Pour batter, 2 tablespoons at a time, into skillet.

7Tilt pan to make a 6-inch round, thin pancake.

8Brown about one minute; turn and brown on other side. Place about one tablespoonful apple mixture on each; roll up and place in a 12 x 8-inch baking dish.

9Combine brown sugar, orange rind and orange juice.

10Sprinkle over pancakes.

11Broil 5 inches from heat, watching carefully, 2 to 5 minutes until golden brown and pancakes are hot.

12Serve immediately with sour cream.

13Makes 12 to 15 crepes.
