Apple (Diabetic) Pie

  • 2 c. peeled apples
  • 2 Tbsp. cinnamon
  • 8 packets Equal sweetener
  • 1 drop yellow food coloring
  • 2 c. water
  • 2 (9-inch) pie shells

Directions

    Slice apples in saucepan; add water and 1 tablespoon cinnamon. Cook until apples are tender.

    Drain all but 1/2 cup water.

    Add Equal, 1 tablespoon cinnamon and food coloring.

    Mix well.

    Prick shells with a fork and pour apple mixture into shell.

    Cover with remaining shell, cut slits in top and bake as directed for shells.
