Apple Ginger Jam Recipe

  • 2 sm limes
  • 1 1/2 lb Granny Smith apples
  • 1 1/2 lb fresh young ginger
  • 1 1/4 c. water
  • 3 1/2 c. sugar

    Seed unpeeled orange and limes; finely chop.

    Pare apples and core; pare ginger.

    Coarsely chop apples and ginger.

    In a large saucepot bring orange, limes, apples, ginger and water to a boil; simmer, covered, till tender (about 40 min).

    Add in sugar and stir till dissolved.

    Bring to a boil and boil gently, uncovered, stirring often toward end of cooking, till thick (about 1 hour).
