Apple Gingerbread Crumble

  • 100 g gingerbread, finely crumbled
  • 65 g chilled unsalted butter, finely diced
  • 1 tbsp plain flour
  • 25 g muscovado sugar
  • 800 g apples, peeled and cored
  • 1 None lemon, juiced
  • 25 g fresh ginger, grated
  • 100 g raisins
  • 1 pinch ground cinnamon

    Preheat the oven to 350°F. Mix crumbled gingerbread, diced butter, flour and sugar in a medium bowl. Dice apples and drizzle with lemon juice.

    Melt remaining 1 tbsp butter in a medium saucepan. Add the apples, ginger, raisins and cinnamon. Cook until apples are soft. Place mixture in baking dish and sprinkle with the gingerbread crumble.

    Bake for about 20 mins. Serve warm.
