  • 4 1/2 cups powdered sugar
  • 1 tablespoon self-raising flour
  • 2 1/2 cups oatmeal
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup oil
  • 1/3 cup apple sauce
  • 1 apple grated
  • 9 muffin red paper, cases
  • 1 egg white
  • red food coloring
  • 5 jelly beans green
  • 3 cinnamon sticks cut into 9 1 inch pieces

    Preheat the oven to 350°F. Mix 2 cups of powdered sugar with the flour, oatmeal and cinnamon. Add the eggs, milk, oil, apple sauce and grated apple. Mix everything with a whisk. Put the 9 paper muffin cups into the wells of a 12 hole muffin pan. Distribute the cake mixture evenly between the muffin cups. Bake them for about 20 mins and leave them to cool on a wire rack for 1 hour.

    Beat the egg white and gradually fold in 2 1/2 cups of powdered sugar and the red food coloring. Smash the jelly beans and roll out thinly on a work surface sprinkled with powdered sugar, and cut out 9 small leaves. Coat the muffins evenly with the red icing. Insert a piece of cinnamon stick as a stalk and a jelly bean leaf on each muffin. Let the icing dry and serve.
