Apple Pancakes

- 1 5/8 cups self rising flour
- 1 cup milk
- 1 egg
- 2 apples peeled and grated
- 1 teaspoon vanilla extract
- 3 teaspoons sugar
Directions

1In a bowl, mix flour with milk. Mix in egg, peeled and grated apples, vanilla extract, and sugar.

2Heat a small amount of oil in a small frying pan. Remove any excess oil with a paper towel.

3With a soup ladle, pour batter into frying pan. When bubbles form, flip pancake and cook on the other side.

4Make the pancakes one at a time.

5Serve with powdered sugar and cinnamon, or just honey, if desired.
