  • 1 c. sugar
  • 1 c. pineapple juice
  • 8 medium tart apples, sliced
  • 1 tsp. cornstarch
  • dash of salt
  • 2 tsp. cold water
  • 1/2 tsp. vanilla
  • 2 Tbsp. butter

    In saucepan, add sugar and juice; bring to a boil. Add apples; simmer, uncovered, until clear and tender. Do not boil. Take out apples and cool. Make paste of cornstarch, water and salt. Add to syrup; cook until it thickens. Remove from heat. Add vanilla and butter. Put apples into unbaked pie crust. Pour juice over and make a crisscross pie crust top. Bake at 425° for 35 minutes.
