Apple Pound Cake

Ingredients

  • 2 c. sugar
  • 1 c. Wesson oil
  • 3 eggs
  • 1 tsp. vanilla
  • 3 c. flour
  • 1 tsp. each salt and baking soda
  • 3 c. peeled, chopped apples
  • 1 c. chopped nuts
  • 3/4 c. coconut
  • 1/2 tsp. black walnut flavoring

Directions

    Mix the sugar and oil and beat. Add the eggs and vanilla. Sift together in a separate bowl the flour, salt and baking soda. Mix dry ingredients into wet mixture. Beat until smooth. Batter will be stiff. Add the apples, nuts, coconut and flavoring.

    Mix together. Bake in greased and floured large tube pan at 350° for 1 1/4 hours.

    Test for doneness.

    Coll in pan 1/2 hour before removing. Frost with cream cheese icing, if desired.
