  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1/2 teaspoons Cinnamon
  • 1/2 teaspoons Nutmeg
  • 1/2 cups Oil
  • 2 cups Sugar
  • 3 whole Eggs
  • 1 teaspoon Vanilla
  • 2 cups Apples, Finely Chopped
  • 1/2 cups Raisins
  • 1 cup Pecans, Chopped (optional)

    In a mixing bowl, combine flour, baking soda, salt, cinnamon and nutmeg. With mixer at medium speed, beat together oil, sugar, eggs and vanilla. Gradually add flour mixture, beating until smooth. Fold in apples, pecans and raisins. Pour into a greased and floured 10-inch tube pan. Bake at 325 degrees for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes, then remove from the pan.
