- 2 cups flour, all-purpose
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup vegetable oil
- 2 cups sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups apples finely chopped
- 1/2 cup raisins, seedless
- 1 cup pecans chopped
Directions

1Mix together flour, baking soda, salt, cinnamon and nutmeg.

2With mixer at medium speed, beat together oil, sugar, eggs and vanilla.

3Gradually add flour mixture, beating until smooth.

4Fold in apples, pecans and raisins.

5Pour into greased and floured 10 inch tube pan.

6Bake at 325F (160C).

7for 1 hour and 15 minutes, or until toothpick inserted in center comes out clean.

8Cool 10 minutes, then remove from pan.
