Apple Roasted Duck

Ingredients

  • 2 mallard ducks
  • 2 c. apples, quartered
  • 1 c. raisins
  • 1 c. bread crumbs
  • 1 c. apple juice
  • 1 slice onion
  • 2 tsp. salt
  • 1/4 tsp. pepper

Directions

    Clean and wash ducks thoroughly.

    Mix apples, raisins and bread crumbs.

    Pour in 1/2 to 3/4 cup apple juice and mix until moist. Fill ducks with mixture.

    Rub ducks with onion slice, salt and pepper.

    Baste with remaining apple juice.

    Wrap in aluminum foil and bake in oven at 325° for 2 1/2 to 3 hours.
