- 4 c. diced, pared apples
- 1 c. coarsely chopped pecans
- 2 c. sugar
- 3 c. flour
- 2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. allspice
- 1/4 tsp. nutmeg
- 3/4 tsp. cinnamon
- 1 c. melted butter
- 2 tsp. vanilla
- 2 eggs, lightly beaten
Directions

1Stir together apples, nuts and sugar.

2Let stand, stirring often, until juicy, about 1 hour.

3Mix flour, soda, salt and spices together.

4Add apple mixture and stir well.

5Blend in butter and vanilla.

6Add eggs.

7Turn into two greased and floured 1 pound coffee cans.

8Tie 2-inch wide band of double foil around top.

9Bake at 325° for about 1 hour and 15 minutes, or until tester comes out clean.

10Cool on rack 10 minutes.

11Remove foil; turn out.

12Serve warm with pudding sauce or cold as cake or tea bread.
