Apple Rose Tarts

  • 1 frozen puff pastry sheet
  • 3 tablespoons powder sugar for decorating

    Preheat the oven to 375 degrees F and grease a muffin tin with a non-stick spray.

    Follow the puff pastry directions and thaw as directed. 1 sheet makes 6 rose tarts.

    Cut two apples in half and remove the core. Slice the apples as thin as possible. They should look like little thin arches or rainbows.

    Using a small microwaveable bowl, add the lemon juice and fill halfway with water. Place the apples in the bowl and microwave for 3 minutes. Remove from the microwave and drain the water.

    In a separate bowl, add 2 tbs of water and the apricot preserves. Microwave for 1 minute.Stir until it has a thin consistency.

    Spread the mixture on each puff pastry strip. Line the apples over the top edge, overlapping them at the middle. Sprinkle the whole strip with cinnamon and fold the pastry in half so the bottoms of the apples are covered. Starting from one end, roll the pastry from one side to the other. Seal the pastry to itself and place it in a greased muffin tin.

    Repeat for the remaining 5 pastries.

    Place in the oven for 30 minutes or until the edges of the apples start to brown. Allow to cool for 5 minutes and then drizzle with honey and sprinkle powdered sugar on top.
