  • 4 apples, pared and diced
  • 1/2 cup sugar
  • 1 lemon, rind of, finely chopped
  • 3 cups hot water
  • 1/2 cup red wine or 1/2 cup white wine
  • 2 tablespoons flour
  • 2 tablespoons cold water
  • 1/2 cup heavy cream

Directions

    Combine apples, sugar, lemon rind, and hot water. Cook until apples are tender. Add wine. Blend flour and cold water. Thin with a few tablespoons of hot soup. Simmer 5 minutes. Chill, and add cream before serving.
