Apple Stuffed Pork Shoulder

- 1 medium onion, finely chopped
- 1/4 c. butter or margarine
- 1 tsp. salt
- pinch of pepper
- 1/4 tsp. oregano
- 2 1/2 c. soft bread crumbs
- 1 3/4 c. chopped apples
- 1/2 c. boiling water
- boned pork shoulder with deep pocket
Directions

1Cook onion in butter or margarine until golden brown.

2Combine with remaining stuffing ingredients.

3Set oven for moderate 350°. Fill pocket in pork shoulder with stuffing.

4Fasten with white twine.

5Place pork on rack in open roaster.

6Roast approximately 40 minutes per pound.
