  • 8 tbsp (1 stick) butter, softened
  • 3/4 cup sugar
  • 1/2 tsp almond extract
  • 2 None eggs
  • 1 1/2 cups self-rising flour, sifted
  • 1/2 cup flaked coconut
  • 2 small red apples, cored and thinly sliced

  • 3 tbsp butter
  • 2 tbsp honey
  • 1/2 cup sliced almonds, toasted

    Preheat the oven to 350°F. Lightly grease an 8-loaf mini loaf pan. Line bottoms and long sides with baking paper.

    Beat butter, sugar and almond extract in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold in flour and coconut. Spoon into prepared pan. Arrange apple slices over top of each.

    Bake for 15-20 mins, until toothpick inserted into center comes out clean.

    For the topping, place butter and honey in a microwave-safe bowl. Microwave on medium-high 1 min, stirring once, until butter has melted and mixture is bubbling. Brush over cakes and sprinkle with almonds. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
