Apple-Walnut Cake

Ingredients
- 4 c. coarsely chopped apples (skin left on)
- 2 c. sugar
- 2 eggs
- 1/2 c. vegetable oil
- 2 tsp. vanilla
- 2 c. sifted flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 c. chopped walnuts (I have used hickory nuts)
Directions

1Combine apples and sugar; let stand.

2Beat eggs slightly; beat in oil and vanilla.

3Mix and sift flour, soda, cinnamon and salt. Stir into egg mixture alternately with apple-sugar mixture.

4Stir in nuts.

5Pour into greased and floured oblong 13 x 9 x 2-inch pan. Bake at 350° for 1 hour or until cake tests done.

6Let stand in pan until cool.

7(I like a thin powdered sugar icing on top but you can leave without; a very rich, heavy, moist cake.)
