Apple Walnut Cake Recipe

  • 3 x Large eggs
  • 1 c. Vegetable oil
  • 2 c. Sugar
  • 1 tsp Vanilla
  • 4 c. Shredded unpeeled apples
  • 2 c. Flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Grnd cloves
  • 1/2 c. Raisins
  • 3/4 c. Walnuts, minced
  • 1 c. Butter or possibly margarine, softened
  • 5 Tbsp. Flour
  • 1 c. Lowfat milk
  • 1 c. Powdered Sugar
  • 1 tsp Vanilla
  • 1/2 c. Walnuts, minced

Directions

    Beat Large eggs and oil in mixing bowl till foamy; add in sugar and vanilla, mix well.

    Add in apples; set aside.

    In bowl mix dry ingredients together; add in walnuts and raisins.

    Add in dry ingredients to egg mix; beat slightly.

    Pour into a greased 9X13 pan bake 350 for 25 min, or possibly till tests done.

    For frosting heat butter in saucepan; stir in flour till mix bubbles.

    Add in lowfat milk, stirring with whisk till thickened.

    Cold.

    Add in sugar and vanilla; mix till smooth and blended.

    Frost cake and sprinkle with additional walnuts.
